Braised Endive Recipe
Ingredients
4 Belgian endive, halved lengthwise
2 cups Chicken Stock or Vegetable Stock or low-sodium chicken broth
2 teaspoons lemon juice
1/4 teaspoon salt
1/8 teaspoon black pepper
1/2 cup plain dry bread crumbs
2 tablespoons grated Parmesan cheese
Directions
1 Preheat the broiler, setting the rack 6 inches from the heat.
In a large shallow flameproof casserole, arrange the endive, cut sides down.
Add the stock, lemon juice, salt, and pepper and cover with wax paper and a lid.
Simmerfor 15 to 20 minutes or until the endive is tender.
Sprinkle the endive with the bread crumbs and cheese.
Broil for 1 to 2 minutes oruntil the topping is golden brown.
