Ingredients

 
3 whole large chicken breasts, boned and each cut in half
 
2 tablespoons all-purpose flour
 
1 tablespoon salad oil
 
Butter or margarine
 
1 small onion, diced
 
1 8- to 8 1/4-ounce can tomatoes
 
1/2 cup water
 
1 teaspoon prepared mustard
 
1/2 teaspoon salt
 
1/4 cup heavy or whipping cream

Directions

1. Coat chicken-breast halves with flour. In 12-inch skillet over medium-high heat, heat salad oil and 3 tablespoons butter or margarine until butter melts; add chicken and onion; cook until chicken is browned and onion is tender.
2. Stir in tomatoes with their liquid, water, mustard, and salt; over high heat, heat to boiling. Reduce heat to low; cover and simmer 25 minutes or until chicken is tender.
3. When chicken is done, skim off fat from liquid in skillet; stir in cream; heat through.
