Braised Beef Tongue With Vegetables Recipe
Ingredients
1 (4 to 5 pounds) fresh beef tongue
Water
2 teaspoons salt
2 leeks
3 medium white turnips
2 carrots
Directions
Scrub tongue and put in kettle.
Cover with water and add salt.
Bring to a boil and skim.
Chop leeks, peel and dice turnips and carrots.
Add to beef tongue and simmer 3 hours.
Remove tongue from broth.
Reserve broth.
Skin tongue.
