Braised Bamboo Shoots And Winter Melon Recipe
Ingredients

| Bamboo shoots | 1/2 pound | |
| Oil | 2 Cup (16 tbs) | |
| Ginger slices | 2 , shredded | |
| 3 stalks green onion, white part only,cut into 1" (2.5 cm) lengths | ||
| Dark soy sauce | 1 Tablespoon | |
| Oyster | 2 Teaspoon, flavored | |
| Salt | 1/2 Teaspoon | |
| Sugar | 3/4 Teaspoon | |
| Stock | 1/4 Cup (16 tbs) | |
| Cornstarch | 1/4 Teaspoon | |
| Pepper white | 1 Dash | |
Directions
1. Skin winter melon and remove seeds. Wash and cut into 1" x1 1/2" (2.5 cm x4cm) chunks.
2. Cut bamboo shoots into 1" x 1 1/2" (2.5 cm x 4 cm) chunks. Heat oil in wok over medium-high heat. Deep-fry bamboo shoots until golden brown. Drain well.
3. Remove oil, reserving 1 1/2 tablespoons in wok. Heat oil in wok over high heat. Add ginger, stirring for 10-15 seconds. Add fried bamboo shoots, stirring for 30 seconds.
5. Stir in winter melon and remaining ingredients, except cornstarch solution and white pepper. Reduce heat to medium-low. Cover and simmer for 10-12 minutes.
