 Winter melon2/3 pound
 Bamboo shoots1/2 pound
 Oil2 Cup (16 tbs)

 3 stalks green onion, white part only,cut into 1" (2.5 cm) lengths
 Dark soy sauce1 Tablespoon
 Oyster2 Teaspoon, flavored
 Salt1/2 Teaspoon
 Sugar3/4 Teaspoon
 Stock1/4 Cup (16 tbs)
 Cornstarch1/4 Teaspoon
 Pepper white1 Dash

Directions

1. Skin winter melon and remove seeds. Wash and cut into 1" x1 1/2" (2.5 cm x4cm) chunks.
2. Cut bamboo shoots into 1" x 1 1/2" (2.5 cm x 4 cm) chunks. Heat oil in wok over medium-high heat. Deep-fry bamboo shoots until golden brown. Drain well.
3. Remove oil, reserving 1 1/2 tablespoons in wok. Heat oil in wok over high heat. Add ginger, stirring for 10-15 seconds. Add fried bamboo shoots, stirring for 30 seconds.
5. Stir in winter melon and remaining ingredients, except cornstarch solution and white pepper. Reduce heat to medium-low. Cover and simmer for 10-12 minutes.
