Brain Appetizer Recipe
Ingredients
| Calf brain | 1 | |
| Water | 1 | |
| Whole cloves | 2 | |
| Peppercorns | 8 | |
| Eggs | 2 , beaten | |
| Bread crumbs | 1⁄2 Cup (8 tbs) | |
| Corn oil | 2 Tablespoon | |
| Crackers | 2 | |
| Mint sprig | 1 | |
| Salt | To Taste | |
| Salt | To Taste | |
| Pepper | To Taste |
Directions
Place the brains in a pan, cover with water and add the salt, cloves and peppercorns.
Bring to boil over high heat.
Reduce heat and simmer for about ten minutes.
Peel and discard the skin.
Cool and slice into serving pieces.
Dip the slices into the beaten egg, then in the bread crumbs.
Fry in heated oil until browned and cooked through.
Sprinkle with salt and pepper.
Arrange the brains on the crackers.
Garnish each with a mint leaf.
Serve with drinks.
