Braided Salmon And Sole Mimosa Recipe

Ingredients
8 long salmon fillets
8 long fillets of sole
1/2 Cup (125 ml) white wine
Salt and pepper
1 tsp (5 ml) basil
3/4 Cup (180 ml) 15% cream
2 tbsp (30 ml) butter
4 hard-boiled egg yolks
Pressed through sieve
Bouquet of chervil
Directions
– Preheat oven to 425 °F (220 °C).
– Braid 2 salmon fillets and 1 sole fillet for each serving.
– Lightly butter a baking dish, place salmon and sole braids in it and baste with wine. Season with salt and pepper, cover and bake for 15 minutes.
– Remove dish from oven and place braids on plates. Keep warm.
– Pour cooking juice in a small saucepan, add basil, and reduce liquid by half, then add cream and cook until cream thickens slightly.
– Remove from heat, add butter and beat with wire whisk.
– Pour sauce over fish braids and sprinkle with egg yolk bits, then garnish with chervil sprigs.
