Bows with Rich Tomato Basil Sauce Recipe
Ingredients
| 185 g/6 oz bow pasta | ||
| Tomato basil sauce | ||
| Olive oil | 2 Teaspoon | |
| Onion | 1 , sliced | |
| Garlic | 1 Clove (5gm), crushed | |
| 3 tomatoes, peeled, seeded and chopped | ||
| 125 ml/4 fl oz chicken stock | ||
| Tomato puree | 1 Tablespoon | |
| Basil | 1 Tablespoon, chopped | |
| Parsley | 2 Teaspoon, chopped | |
| Sugar | 1/2 Teaspoon | |
| black pepper | 1 | |
| Grated Parmesan cheese | ||
Directions
1. Cook pasta in boiling water in a saucepan following packet directions. Drain, set aside and keep warm.
2. To make sauce, heat oil in a saucepan and cook onion and garlic over a medium heat for 3-4 minutes or until onion is soft. Add tomatoes, stock, tomato puree, basil, parsley and sugar and simmer for 10-15 minutes or until reduced and thickened. Season to taste with black pepper. Spoon sauce over pasta. Sprinkle with a little grated fresh Parmesan cheese and extra chopped fresh basil.
