| Boneless, skinless chicken thighs | 2 Pound (or breasts) | |
| Olive oil | 2 Tablespoon | |
| Garlic | 2 Clove (10 gm), chopped | |
| Ginger | 1⁄2 Teaspoon, ground | |
| Red pepper flakes | 1⁄2 Teaspoon, crushed | |
| Apple juice | 1⁄2 Cup (8 tbs) | |
| Light brown sugar | 2⁄3 Cup (10.67 tbs) | |
| Ketchup | 1⁄4 Cup (4 tbs) | |
| Water | 1 Cup (16 tbs) | |
| Low sodium soy sauce | 2⁄3 Cup (10.67 tbs) | |
| Cornstarch | 1 Tablespoon | |

Directions
1)Cut chicken into bite-sized pieces.
MAKING:
2)In a large skillet, heat the olive oil.
3)Add chicken pieces and cook until lightly browned. Remove chicken and set aside.
4)To the skillet, add garlic, ginger, red pepper flakes, apple juice, light brown sugar, ketchup and water.
Heat over medium heat until ingredients are dissolved and mixed well and bring to a boil.
5)Reduce heat and simmer for 20 minutes.
6)During the last 10 minutes, add your chicken and continue simmering for the remaining for 10 more minutes.
7)In a small bowl, add cornstarch and water and whisk together.
8)During the last minute of simmering, add this and stir well to thicken the sauce.
SERVING:
9)Best served over rice.
