 Fish fillets1 pound
 Onion1/2 Cup (16 tbs), chopped
 Celery1/2 Cup (16 tbs), chopped
 Butter/Margarine1/4 Cup (16 tbs), melted
 Garlic1 Clove (5gm), finely chopped
 Clams1 Can (10oz), minced
 Shrimp1 Can (10oz), drained
 Tomatoes1 Can (10oz)
 Water1 Cup (16 tbs)
 Salt1 1/4 Teaspoon
 Thyme1/4 Teaspoon
 Bay leaf1 , crushed
 Pepper1 Dash
 As desired Grated Parmesan Cheese

Directions

Remove skin and any bones from fillets; cut into 1/2 inch cubes.
Cook onion, celery, and garlic in butter until tender.
Add remaining ingredients except cheese and bread.
Bring to boiling point and simmer for 20 minutes.
Sprinkle cheese over bread; toast.
Arrange toast in large soup bowls and cover with the bouillabaisse.
