Ingredients

 4 tablespoons olive oil or 3 oz. butter
 Onion1 Large, sliced
 Garlic2 Clove (5gm), crushed
 Tomatoes2 , sliced
 About 1 1/2 lb. white fish, use if possible a mixture consisting of sole or plaice, red mullet, eel, hake, John Dory
 Good pinch saffron powder
 Bay Leaf1
 Salt2 Teaspoon
 Pepper1
 Water1 1/2 Pint
 1 small lobster or few prawns
 White wine1/4 Pint
 Chopped parsley

Directions

Heat the oil or butter in a large saucepan, then fry the sliced onion, crushed garlic and sliced tomatoes until soft.
Add all the other ingredients except lobster or prawns, wine and chopped parsley.
Simmer for 15-20 minutes.
Take out the bay leaf and add the chopped lobster meat or prawns and heat for a further 5 minutes.
Add wine and reheat.
Pour into hot dish or soup plates and garnish with chopped parsley.
Serve with toast or French bread.
