Simple Bouillabaisse Recipe
Ingredients
| 4 tablespoons olive oil or 3 oz. butter | ||
| Onion | 1 Large, sliced | |
| Garlic | 2 Clove (5gm), crushed | |
| Tomatoes | 2 , sliced | |
| About 1 1/2 lb. white fish, use if possible a mixture consisting of sole or plaice, red mullet, eel, hake, John Dory | ||
| Good pinch saffron powder | ||
| Bay Leaf | 1 | |
| Salt | 2 Teaspoon | |
| Pepper | 1 | |
| Water | 1 1/2 Pint | |
| 1 small lobster or few prawns | ||
| White wine | 1/4 Pint | |
| Chopped parsley | ||
Directions
Heat the oil or butter in a large saucepan, then fry the sliced onion, crushed garlic and sliced tomatoes until soft.
Add all the other ingredients except lobster or prawns, wine and chopped parsley.
Simmer for 15-20 minutes.
Take out the bay leaf and add the chopped lobster meat or prawns and heat for a further 5 minutes.
Add wine and reheat.
Pour into hot dish or soup plates and garnish with chopped parsley.
Serve with toast or French bread.
