Ingredients

 
Yellow cake mix - prepared as per the directions on the package to yield 2 9-inch cakes
 
For Pastry Cream
 
Butter - 1/2 tablespoon
 
Whole milk - 1 cup
 
Whipping cream - 1 cup
 
Sugar - 7 tablespoons
 
Cornstarch - 2 tablespoons
 
Eggs - 3
 
Vanilla extract - 2 teaspoons
 
Salt - a generous pinch
 
For Chocolate Ganache
 
Dark chocolate - 4 ounces, preferably bitter
 
Cream - 1/2 cup
 
Butter - 1 teaspoon

Directions

MAKING
1) In a mixing bowl, whisk together the eggs, cornstarch and sugar till a thick mixture is formed.
2) In a shallow pan placed over medium heat, mix together the milk, cream and butter. Bring the mixture to a boil.
3) Turn the heat to low, add the egg mixture to the milk mixture and whisk well to incorporate all the ingredients together. Cook for 1 minute, whisking all the while.
4) Remove the mixture from the heat and strain it into a large mixing bowl.
5) Add the vanilla and salt and mix well by whisking.
6) Cover the mixture with a plastic wrap and place in the fridge for several hours. The mixture should be completely chlled.
7) To make the ganache, break the chocolate into small pieces and put it in a bowl.
8) Heat the milk and cream and pour the mixture all over the chocolate. Stir well.

FINALIZING
9) Place one of the cakes on a plate and cover with the prepared pastry cream.
10) Place the other cake on top and press down gently.
11) Top the second cake with the ganache slowly and gently. Smoothen the chocolate with the help of a spatula.
12) Chill the preparation till it is time to serve.

SERVING
13) Remove the Boston pie from the fridge and let it sit for a few minutes. Cut the cake into wedges and serve while still slightly chilled. Makes an excellent dessert.

I love Boston cream pie but rarely made it at home because I followed a recipe which included the cake recipe and the pastry cream was too complicated to make. It would always turn out lumpy. Ever since I saw this recipe, I've stopped ordering the dessert at cafes and make it every other weekend to treat myself. I love the idea of using a packaged cake mix and it turns out perfect.
