Boston Cod Recipe
Ingredients
| 1 cod fillet, cut into 3 pieces | ||
| Oil | 1 Tablespoon | |
| Tomatoes | 4 | |
| Red onion | 1/2 , chopped | |
| Tomato Paste | 1 Teaspoon | |
| Oregano | 1 Teaspoon | |
| Pepper | 1 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| Sugar | 1/2 Teaspoon | |
| Red wine vinegar | 1 Tablespoon | |
| Cornmeal | ||
| Milk/cream | ||
Directions
MAKING
1. In a frypan heat the oil.
2. Dip the fish into some milk or cream, dredge in cornmeal and saute about 7 minutes per 1" thickness.
3. Remove the fish to a warm plate and add the onion and chopped tomatoes to the frypan.
4. Stir in the tomato paste and sprinkle with oregano, salt, pepper and sugar.
5. Put in the vinegar and stir well to make a sauce.
SERVING
6. Serve with the fish.
