Borsch Recipe

Ingredients
1 recipe basic brown stock
1 large or 2 small beetroots
1/2 teacup fresh cream, juice of 1/2 lemon
1 tablespoon butter
2 teaspoons plain flour, salt and pepper to taste
Directions
Boil the beetroots with the skins. Peel off the skins and grate the beetroots.
Heat the butter in a vessel and fry the flour for a little time.
Add the stock and the grated beetroots.
Boil the soup for 30 minutes.
Add salt and pepper.
To make sour cream, beat the cream and add the lemon juice.
Serve hot with a teaspoon of sour cream in each cup, or mix the cream in the soup and serve.
