Terragon Bordelaise Sauce Recipe

Ingredients
| Butter | 2 Teaspoon | |
| Green onions | 3 , chopped | |
| Red wine | 3/4 Cup (16 tbs) | |
| Beef Stock | 2 Cup (16 tbs) | |
| Pinch of thyme | ||
| Pinch of tarragon | ||
| Beurre manie | 2 Tablespoon, kneaded | |
| Lemon juice | 1 Tablespoon | |
| Parsley | 1 Tablespoon, chopped | |
| Tarragon | 1 Teaspoon, chopped | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
– In a saucepan, melt butter and saute green onions without browning. Add wine and reduce liquid by half.
– Add beef stock and fines herbes and simmer for 5 minutes. Season with salt and pepper. Add kneaded butter and stir with wire whisk or beater until smooth. Pour mixture through sieve.
– When ready to serve, add lemon juice, parsley and tarragon.
