Bordelaise Sauce Recipe

| Fresh mushrooms | 1⁄2 Cup (8 tbs), chopped | |
| Butter | 1 Tablespoon | |
| Cornstarch | 3 Tablespoon | |
| Beef stock | 2 Cup (32 tbs) | |
| Tarragon leaves | 2 Teaspoon, crushed | |
| Lemon juice | 2 Tablespoon | |
| Red wine | 3 Tablespoon |

Directions
1. In a pan cook mushrooms in butter till tender.
2. In a bowl or a cup mix cornstarch and cool stock together and stir into mushrooms.
3. Cook and stir to boiling.
4. Add tarragon, lemon juice, red wine and a dash of pepper.
5. Simmer 5 to 10 minutes.
SERVING
6. Mix the sauce into salads or use as desired and serve.
