Ingredients

 Potatoes4 Medium
 Garlic1 Clove (5gm)
 Cooking oil1 Tablespoon
 Tomatoes2 , diced
 1/4 teaspoon each of salt, pepper, and ground thyme
 1/4 teaspoon each of salt, pepper, and ground thyme

Directions

Peel potatoes and boil until done.
Cut into thin slices.
Brown garlic lightly in oil; remove garlic; add tomatoes, salt, pepper, and thyme.
Cook gently for 5 minutes.
Add potatoes and cook for 5 to 10 minutes longer.
Serve immediately.
