1 cup flour
 
1 cup whole wheat flour
 
1/2 teaspoon salt
 
1/2 teaspoon baking soda
 
2 teaspoons baking powder
 
2/3 cup nonfat dry milk powder
 
1/3 cup wheat germ
 
1/2 cup firmly packed brown sugar
 
1/4 cup chopped nuts
 
1/2 cup unsalted dry roasted peanuts, chopped
 
1/2 cup raisins
 
3 eggs
 
1/2 cup oil
 
1/2 cup molasses
 
3/4 cup orange juice
 
2 medium bananas, mashed (about 1 cup)
 
1/3 cup dried apricots, chopped

Directions

Combine flours, salt, soda, baking powder, dry milk, wheat germ, brown sugar, nuts, peanuts, and raisins in a large bowl; blend thoroughly with fork. Beat eggs; add oil, molasses, orange juice, bananas, and apricots, and beat thoroughly. Add mixture to dry ingredients and stir just until all dry ingredients are moistened. Pour into pans and bake for 1 hour, or until center is firm when pressed lightly. Cool slightly in pan; then remove from pan and cool completely. When cool, wrap tightly and store in a cool place. Variations 1. Add 1/2 small orange, ground or chopped very finely, to the liquid ingredients before adding liquids to dry ingredients. 2. Use raw chopped apple, grated carrot, applesauce, fresh ground apricots, peaches, pears, or zucchini instead of bananas.
