Bolo Gostoso Recipe
Ingredients
| 500 grams semolina or rava | ||
| Coconuts | 1 1/2 | |
| Cardamom seeds | 1 Teaspoon | |
| 1/2 wineglass wine | ||
| Sugar | 750 Gram | |
| 50 grams mixed sliced nuts like cashewnuts, almonds and raisins | ||
| Eggs | 6 , separated | |
| Vanilla essence | 1 Teaspoon | |
Directions
Grind the coconut to a paste.
Put sugar, 3 tblsps butter and cardamoms over a slow fire and cook till the mixture turns into a syrup.
Cool slightiy and mix in semolina, nuts and essence.
Set aside 1 hour.
Beat the yolks and mix in along with wine.
Then fold in the stiffly beaten egg whites.
Grease and flour a shallow baking tray, put in the mixture and bake in a moderate hot oven to a light golden colour.
If you like you can arrange whole nuts on top of the batter in any design you like before putting it to bake.
