Bollito Misto Steamed Vegetable Platter Recipe
Ingredients
| Beets | 4 | |
| 4 new potatoes, unpeeled, or 4 turnips, peeled | ||
| 4 medium carrots or parsnips | ||
| 3 large stalks broccoli with florets | ||
| Cabbage | 1/2 Medium | |
| Zucchini | 4 Small | |
| OR | ||
| Any vegetable assortment of your choice | ||
| 1/4 cup butter, melted, or Herbed Butter Sauce | ||
Directions
GETTING READY 1) Scrub the skin off from the beets, potatoes and turnips. 2) Peel the skin from the carrots. 3) Cut the broccoli into thich stalks. Leave atleast 3 inches of stem with the florets. 4) Slice the cabbage into quarters. MAKING 5) In the steamer, place the potatoes, turnip, beets and carrots. 6) Boil the vegetables over boiling water for around 20 minutes or until all veggies turn soft. 7) Remove the vegetables from the heat. 8) In the steamer again, place the broccoli, whole zucchini and cabbage. 9) Boil the vegetables for around 10 minutes or until veggies turn tender. 10) Remove the vegetables from the heat. 11) Cut the whole zucchini and broccoli into long pieces. 12) Make bite-size pieces of potatoes, beet, carrots and turnips. FINALIZING 13) In a large salad bowl, place the green vegetables in the center along with other vegetables on the side. 14) Season with lemon juice. SERVING 15) Serve the steamed vegetables with herbed butter sauce or withe simple melted butter.
