Ingredients

 
1 teaspoon salt
 
1 teaspoon mustard
 
2 teaspoons sugar
 
few grains cayenne
 
2 1/2 tablespoons flour
 
2 tablespoons melted butter or fortified margarine
 
2 egg yolks, or 1 egg
 
3/4 cup milk
 
1/2 cup vinegar

Directions

Mix the dry ingredients; add the egg yolks (slightly beaten), butter or margarine, milk and vinegar slowly.
Cook in a double boiler until the mixture thickens.
Cool before using.
If cooked too long it will curdle.
