Boiled peanuts is a personal favorite of mine. This is what we call them in the South. I love the taste of these boiled peanuts cooked in salt water and chicken stock. A great way to enjoy a wonderful evening with a book by your side.

Salt - 1/2 Cup

Directions

Boil 6 cups of water. Add the chicken stock and the salt to it.(add more salt if required). You may even add spicy seasoning peppers or anything else as per your specific tastes. Add in the peanuts and stir(the peanuts will take on the flavor of the salty water and the chicken broth). Cover and cook for 3-4 hours. Stir in between. Check to see if the cover of your peanuts is soggy and the peanuts inside are salty. You may need to cook it for 3 to 7 hours for getting the right flavor and taste.
