Boiled Dinner Recipe
This Boiled Dinner is from my Mom's cookbook; an easy to prepare treat for any occasion! An irresitible combination of beef and veggies - this Boiled Dinner is something you must not want to miss out on!
Ingredients
| Corned beef brisket | 4 Pound | |
| Onion soup mix | 1/2 Cup (16 tbs) | |
| Peppercorns | 4 | |
| Garlic | 1 Clove (5gm), minced | |
| Bay Leaf | 1 | |
| Rosemary | 1/4 Teaspoon, crushed | |
| Water | 3 Cup (16 tbs) | |
| Potatoes | 6 Medium, quartered | |
| 6 medium sized carrots, pared and cut in 1 1/2 in. pieces | ||
| 16 cup celery, cut in 1 in. pieces | ||
| 1 medium sized head young green cabbage, cut in wedges | ||
Directions
Put meat into a deep saucepot or Dutch oven having a tight-fitting cover.
Add soup mix, peppercorns, garlic, bay leaf, rosemary, and water.
Cover, bring to boiling, and simmer 3 1/2 hours.
Add vegetables, placing cabbage on top of meat.
Cover and cook 1 hour, or until tender.
Remove vegetables and meat to a large heated serving platter.
If desired, thicken liquid in sauce pot and serve in a gravy boat.
