 Beef brisket1 Pound
 Cold water2 Quart
 Salt1 Tablespoon
 1 bouquet garni (bay leaf, one quarter teaspoon thyme, one half teaspoon peppercorns, three cloves, four sprigs parsley, a few celery leaves, tied in a cheesecloth bag)
 Chopped mixed vegetables2 Cup (16 tbs)
 6 leeks, white part only, quartered lengthwise
 Carrots3 , quartered
 Cabbage6 Small
 Potatoes6 , peeled

Directions

Place the meat in a large kettle.
Add the water, salt, bouquet garni and chopped vegetables.
Bring to a boil, reduce heat and simmer, covered, until the meat is almost tender, about three hours.
Skim frequently.
Add the remaining vegetables and simmer until they are tender, forty-five minutes longer.
Remove the bouquet garni and serve the meat on a platter surrounded with the large pieces of vegetable.
