Boiled Beef Brisket Recipe
Ingredients
Onion - 1, stuck with 2 whole cloves
Beef brisket - 4 lb, trimmed of fat
Celery - 1 cup, cut up with tops
Carrots - 1 cup, cut-up
Parsley - 1/4 cup, coarsely chopped
Bay leaf - 1
Whole black peppercorns - 3
Salt - 1 tablespoon
Parsley - few sprigs
Horseradish sauce - to serve
Directions
GETTING READY
1) Arrange all the ingredients.
MAKING
2) In a large kettle, boil 2 quarts water.
3) Stir in all ingredients, except parsley sprigs.
4) Boil the mixture.
5) Lower the heat; simmer, covered, 3 hours, or until meat is tender.
SERVING
6) Garnish the beef with parsley sprigs.
7) Serve with Horseradish Sauce.
