Boiled Silverside Recipe
Ingredients
| 2-3 lb salted silverside of beef | ||
| Onions | 4 Small | |
| Celery stick | 2 | |
| Carrots | 4 | |
| 2 young turnips | ||
| Bouquet garni | ||
Directions
Soak the silverside for several hours, changing the water once or twice to get rid of excess salt.
Put into a large saucepan with the bouquet garni and cover with fresh cold water.
Bring slowly to the boil and remove scum.
Simmer for an hour and a half.
Now add the vegetables, sliced except for the onions, and cook for a further hour.
