Indian Boiled Rice Recipe

Directions
1. Rinse the rice and add it a little at a time to two quarts of violently boiling salted water. Cook over high heat, stirring occasionally, until the rice is tender, ten to fifteen minutes. Drain.
2. Melt the butter in a heatproof casserole and spoon the rice over it. Cover and place over the lowest heat possible, or place in the oven. Cook ten to fifteen minutes, or until the rice is fluffy and dry. The rice may be kept hot in a slow oven for nearly an hour.
