Boiled Pork With Pease Pudding Recipe
This is a delicious Boiled Pork With Pease Pudding which will make you keep asking for more! Pork is one of the few ingredients I like to include in my daily cooking and this is my comfort recipe that I usually prepare using it. Best enjoyed as a Side Dish this recipe was taught to me by a dear friend who also happens to be a great chef. If you don't want to be a big sinner, don't simply read this Boiled Pork With Pease Pudding recipe, try it as well.
Ingredients
1 small leg or hand of pickled or salted pork
1 onion
1 small turnip
1 stick celery
1 carrot
Salt and pepper
Directions
Cover joint with cold water, and add the pot vegetables roughly chopped.
Simmer for about 2 1/2 hours allowing 25 minutes to the pound, until the joint is done.
Prepare Pease Pudding as follows: Soak 1 pint of split peas overnight.
Drain, transfer to fresh water in a saucepan and simmer for approximately an hour and a half.
When soft, sieve them, and add 1 ounce of butter and the beaten yolk of one egg.
Season to taste.
Blend all together and put the puree into a greased dish covered with foil and steam or bake for a further half an hour.
If you prefer, there are some very good tinned varieties of pease pudding to be bought, which simply need heating.
