6 to 8 medium-sized onions
 
1/2 cup (125 mL) dry currants
 
1 1/2 cups (375 mL) water
 
2 tbsp (30 mL) butter
 
1 1/2 tbsp (22 mL) flour
 
Juice and grated rind of 1 lemon

Directions

€¢ Peel the onions. Cut into slices and break into rings. Place in a microwave-safe dish. Do not add any liquid.
€¢ Cover and microwave 2 minutes at HIGH.
€¢ To prepare Currant Sauce, place the currants and water in a microwave-safe dish, microwave 7 minutes at HIGH.
€¢ Meanwhile, mix together the butter and flour. Add the lemon rind and juice to the currants, then stir in the flour and butter mixture. Mix well.
€¢ Microwave at MEDIUM-HIGH 4 to 5 minutes, stirring twice.
€¢ When sauce is creamy and cooked, pour over the onion slices.
€¢ Salt to taste.
€¢ These can be prepared ahead of time and kept at room temperature, covered.
€¢ When ready to serve, reheat at MEDIUM-HIGH 2 to 3 minutes. Stir and serve.
