1 pound new potatoes of uniform size
Boiling water
1 sprig mint
1 teaspoon salt
Chopped parsley
Directions
Skin the potatoes by scrubbing with a soft brush (or by rubbing with your thumb, if they are really fresh).
Salt the boiling water.
Add the mint and potatoes.
Boil them until tender (about 12 to 15 minutes).
You can always test them with a fork.
Drain well, so that there is no water in the bottom of the pot.
Discard the mint.
Cover the pot with a clean, folded cloth (to absorb the steam) and put it back on a gentle heat so that the potatoes inside dry off.
It is very important that potatoes should get a chance to dry, otherwise they will be soapy.
Toss lightly in butter and serve with a sprinkle of chopped parsley and chopped mint on top.
