Boiled Lobster Recipe

Ingredients
2 (1 pound) live lobsters
3 quarts water
2 tablespoons salt
Clarified Butter
Directions
Plunge lobsters headfirst into boiling salted water.
Return water to a boil; cover, reduce heat, and simmer 10 minutes.
Drain.
Place lobster on its back.
Cut the shell of the tail segment lengthwise.
Insert a sharp knife between the body shell and tail shell, cutting the two apart.
Remove the stomach (located just back of the head) and the intestinal vein
Crack claws.
Serve with Clarified Butter
