Boiled Leg Of Lamb And Parsley Sauce Recipe
Ingredients
1 leg of lamb, 5 to 6 pounds
2 onions
2 stalks celery
Enough boiling water to cover
2 leeks
2 cloves garlic
1 bunch parsley
1 bay leaf
1 sprig thyme
1 cup barley
2 carrots
2 teaspoons salt
Directions
When the water is boiling, add the lamb and all the other ingredients except the salt.
Bring slowly to a boil again and .simmer gently for 2 hours.
Skim if necessary from time to time.
Add salt and simmer for another half hour.
Turn off the heat and let the leg set in the water while you make the sauce.
