Ingredients

 2 to 2 1/2 pounds breast or shoulder of lamb
 3 or 4 white peppercorns
 Bay Leaf1
 1 tablespoon dill sprigs, chopped, or 1/2 teaspoon dill seeds

Directions

Rinse meat quickly with hot water.
Place in kettle.
Cover with boiling salted water.
Bring to boil.
Skim.
Add bay leaf, dill, salt and pepper.
Cover.
Simmer 1/2 hours until tender.
Cut in pieces.
Garnish with fresh dill.
Serve with dill sauce and boiled potatoes.
