Boiled Beef Tongue Recipe

Ingredients
1 beef tongue, fresh or pickled
1 tablespoon salt (for fresh tongue)
4 whole cloves
3 peppercorns
1 tablespoon vinegar
1 stalk celery
Directions
Scrub the beef tongue under running cold water.
If salted tongue, soak in cold water for 2 hours after scrubbing and drain well.
Place tongue in a deep pot, add salt, cloves, peppercorns, vinegar and celery and cover with cold water, cover pan and bring to a slow boil.
Simmer for 3 hours over a gentle heat or until tender (test with a skewer, which should penetrate to the centre easily).
Allow tongue to stand in cooking liquid until cool enough to handle.
Lift out and pull off outer skin.
Remove any bones and gristle from root.
Serve tongue sliced.
