8 paper-thin slices Italian prosciutto, or ordinary ham
 
2/3 cup Mozzarella cheese, diced
 
Flour
 
1 egg, beaten
 
3 tablespoons olive oil

Directions

Arrange 4 slices of prosciutto so they overlap slightly, and place half the cheese in the center.
Lightly roll the prosciutto and tuck in the ends so that the cheese will not run out.
Dredge lightly in flour and dip in the egg.
Fry quickly in very hot olive oil, turning only once when golden brown.
This should take no more than 2 minutes for each side.
Repeat process with remaining ingredients.
