Boatman's Stew Recipe
Ingredients
| Haddock fish | 2 Pound | |
| Salt | To Taste | |
| Onions | 2 , sliced | |
| 2 Tbs. pure vegetable oil | ||
| 1 6-oz. can Hunt's Tomato Paste | ||
| Water | 3 Cup (16 tbs) | |
| 1/2 tsp. each: red pepper and black pepper | ||
| Parsley | 1 Cup (16 tbs), finely chopped | |
| Dry white wine | 1/3 Cup (16 tbs) | |
| Italian bread slice | 6 , toasted | |
Directions
Sprinkle fish with 1/2 tsp.salt; let stand 1 hour.
Meanwhile, lightly brown onion in oil; pour off fat.
Stir in Hunt's Tomato Paste, water, red pepper, 1 1/2 tsps. salt, black pepper, parsley and wine.
Simmer 20 minutes.
Add fish; simmer about 10 minutes longer or just until fish flakes easily with a fork.
Meanwhile, lightly brown onion in oil; pour off fat.
