Blushing Pork Chops Recipe
Ingredients
| Pork chops | 4 Large, trimmed | |
| 3 or 4 thin strips lemon peel | ||
| Juice of 1/2 lemon | ||
| Stewed tomatoes | 1 Can (10oz) | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Arrange pork chops in a shallow covered bake dish or casserole.
Sprinkle with salt and pepper.
Drop in strips of lemon peel.
Top with squeezed lemon juice and tomatoes.
Cover and bake at 325F for 30 minutes.
Uncover and bake until tomato mixture thickens slightly and chops are tender, about 20 minutes longer.
Lift chops to warmed plates and spoon tomatoes over each.
If tomato mixture is too dry, stir in a little boiling water or ketchup.
