Blushing Pears Recipe
Ingredients
| Pears | 3 Medium | |
| Water | 2 Cup (16 tbs) | |
| Lemon juice | 2 Tablespoon | |
| 2 cups rose wine | ||
| Sugar | 1/2 Cup (16 tbs) | |
| Orange zest pieces | 3 | |
| Lemon zest pieces | 3 | |
| Red food coloring | 3 Drop | |
| Lemon juice | 1 Teaspoon | |
Directions
Peel pears with a vegetable peeler.
Cut in half and remove core with melon bailer.
In a bowl, combine water and 2 tablespoons lemon juice.
Add pears.
Set aside.
In a stainless steel or enameled saucepan, combine wine and sugar.
Add zest, food coloring and remaining 1 tablespoon lemon juice to syrup.
Bring to a boil.
Remove pears from lemon water and immerse them in wine mixture.
Simmer them, uncovered, over medium heat 8 minutes, or until fruit is tender when pierced with a knife tip.
Remove pears from syrup with a slotted spoon and set aside.
Discard strips of orange and lemon zest.
Continue to cook syrup over medium heat until reduced to 6 tablespoons.
Cut each pear half in 1/ 8 inch crosswise slices.
Fan slices out on a serving platter.
Drizzle 2 teaspoons syrup over each pear and discard remainder.
