Bluefish And Okra Stew, Port-Au-Prince Recipe
Ingredients
| Okra | 8 Ounce, frozen | |
| 3 cups washed spinach or turnip greens, chopped coarsely | ||
| Fish fillets | 2 Ounce | |
| Bay leaf | 1/2 | |
| Thyme | 1 Teaspoon | |
| 1/2 teaspoon chili powder or cayenne pepper | ||
| 1 cup cooked enriched rice (optional) | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
If okra is fresh, cut into slices 1/2 inch thick (ends should be trimmed off first) and cook in boiling salted water.
For frozen okra, cook according to package directions.
Add spinach or turnip greens and continue cooking for 10 minutes.
Meanwhile, broil fish fillets until fish loses its translucence.
Add to vegetables.
Sprinkle with salt, pepper, bay leaf, thyme and chili or cayenne pepper.
Heat well.
