Blueberry Wheat Germ Muffins Recipe

Blueberry wheat germ muffins combines the fresh taste of blueberries along with the nutrition of wheat germ. The lemon zest adds an extra zing to the taste of these lovely muffins.

Ingredients

 
1 3/4 cups all-purpose flour 425 mL
 
1/3 cup wheat germ 75 mL
 
1/3 cup granulated sugar 75 mL
 
l tbsp baking powder 15 mL
 
11/2 tsp grated lemon zest 7mL
 
1/2 tsp salt 2mL
 
1 egg
 
1 cup milk 250 mL
 
1/4 cup vegetable oil 50 mL
 
1 cup fresh blueberries or frozen blueberries,drained 250 mL

Directions

In a large bowl, combine flour, wheat germ, sugar, baking powder, zest and salt.
Make a well in the center.
In another bowl, whisk together egg, milk and oil.
Add to dry ingredients, stirring just until moist and blended.
Fold in berries.
Spoon batter into prepared muffin tin, filling cups three-quarters full.
Bake in preheated oven for 20 to 25 minutes.
