Blueberry Oat Muffins Recipe
These bluberry oat muffins recipe combine the lingering flavor of fresh bluberries with the chewiness of oats. Healthy and flavorful, these blueberry muffins are perfect as evening snacks or served with a lazy afternoon tea.
Ingredients
1 cup quick-cooking rolled oats 250 mL
1 cup water 250 mL
1 cup+ 3 tbsp oat bran cereal 250 mL+ 45mL
ltsp baking powder 5mL
1/2 tsp baking soda 2mL
1/2 tsp sea salt 2mL
3/4 cup packed brown sugar 175 mL
1 egg, beaten
Directions
In a medium bowl, combine quick-cooking oats and water.
Set aside.
In a large bowl, mix together oat bran cereal, baking powder, baking soda, sea salt and brown sugar Add egg and oil and mix only until blended.
Add the oats and mix only until blended.
Fold in blueberries and stir only until moistened.
Do not overmix.
Spoon batter into prepared muffin tin, filling cups three-quarters or to the top.
Bake in preheated oven for 20 to 25 minutes or until done.
