Blueberry Muffins Recipe

Ingredients
2 1/4 cups all purpose flour 550 mL
2 tsp baking powder 10 mL
1 tsp baking soda 5 mL
1/2 tsp each salt and grated nutmeg 2 mL
1 Tb grated lemon rind 15 mL
1 cup blueberries 250 mL
2/3 cup each melted butter and liquid honey 150 mL
2 eggs 2
3/4 cup milk 175 mL
Directions
In large bowl, stir together flour, baking powder, baking soda, salt and nutmeg; stir in lemon rind and blueberries.
In medium bowl, combine butter and honey.
Beat in eggs; whisk in milk.
Make a well in centre of dry ingredients; pour in milk mixture.
Stir just until no dry spots remain; do not overmix.
Spoon batter into greased or paper cup lined muffin cups, filling three quarters full (use an icecream scoop if you have one).
Bake in 400 F (200 C) oven 18 to 20 minutes or until golden brown and firm to the touch.
Let stand 10 minutes in pan on wire rack.
