Blueberry Crumb Cake Recipe
A delicious blueberry crumb cake that the kids would love. You would love to see the smile on your kid's face that this cake can bring. An excellent tea time snack too.
Ingredients
Sifted Flour – 2 cups
Sugar – 1 ½ cups
Butter – 2/3 cup
Baking Powder – 2 teaspoon
Salt – 1 teaspoon
Eggs – 2, separated
Milk – 1 cup
Blueberries – 1 cup, drained
Directions
MAKING
1) In a bowl, sift the flour and sugar
2) Cut the butter using a sharp knife
3) Mix to resemble a coarse mixture and reserve ¾ cup
4) Add the baking powder, salt, egg yolks, and the milk to the remaining mixture
5) Using an electric mixer cream the mixture well
6) In another bowl, whip the whites till stiff
7) Fold gently into the creamed mixture
8) Spread in a 12 x 8 x 2 inch greased and floured baking pan
9) Over the batter arrange the blueberries
10) Bake at 350F for 50 minutes
