Blueberry Cake Recipe
A delicious blueberry cake that the kids would love. You would love to see the smile on your kid's face that this cake can bring. An excellent tea time snack too.
Ingredients
Butter or Shortening – ½ cup
Sugar
Eggs – 2
Flour – 2 ½ cup
Baking Powder – 2 teaspoon
Salt to taste
Nutmeg – ¼ teaspoon
Milk – 2/3 cup
Blueberries – 1 ½ cup
Directions
MAKING
1) In a bowl, using the electric beater, cream the shortening and 1 ½ cups of sugar and the eggs till light and fluffy
2) In a bowl, sift the flour, salt, nutmeg and the baking powder
3) Add the flour mixture to the creamed mixture alternating with milk
4) Fold in the blueberries and spoon the batter into a 9 x 9 x 2 inch cake pan
5) Scatter in the blueberries over the batter
6) Mix the remaining sugar, remaining flour and cinnamon in a small bowl
7) Sprinkle with sugar
8) Bake for 35 minutes at 400F
SERVING
9) Serve warm
