Blueberry Buckle Recipe
Blueberry buckle is a cake like baked dessert made with fresh blueberries and are perfect for the spring and summer. Baked with a hint of cinnamon, the blueberry buckle is a sweet and delcious treat that can be served after any meal.
Ingredients
| Shortening | 1/2 Cup (16 tbs) | |
| Sugar | 1/2 Cup (16 tbs) | |
| Egg | 1 , beaten | |
| Enriched flour | 2 Cup (16 tbs), sifted | |
| Baking powder | 2 1/2 Teaspoon | |
| Salt | 1/4 Teaspoon | |
| Milk | 1/2 Cup (16 tbs) | |
| Blueberries | 2 Cup (16 tbs) | |
| Enriched flour | 1/2 Cup (16 tbs), sifted | |
| Cinnamon | 1/2 Teaspoon | |
| Butter/Margarine | 1/4 Cup (16 tbs) |
Directions
Thoroughly cream shortening and 1/2 cup sugar; add egg, mix well.
Sift 2 cups flour, baking powder, and salt; add to creamed mixture alternately with milk.
Pour into well greased 11 1/2x7 1/2x1 1/2 inch pan; sprinkle blueberries over batter.
Combine 1/2 cup sugar, 1/2 cup flour, cinnamon, butter till crumbly; sprinkle over blueberries.
Bake in moderate oven (350°) 45 to 50 minutes.
Cut in 8 to 10 squares.
Serve warm.
