Blueberry Buckle Recipe
Blueberry Buckle ..a lovely dessert flavored mildly with cinnamon and baked. A dessert with a twist is what I like to call this lovely creation.
Ingredients
Shortening – ½ cup
Sugar – 1 cup
Egg – 1, beaten
Flour – 1 ½ cup
Salt – ½ teaspoon
Baking Powder – 2 ½ teaspoon
Milk – ½ cup
Blueberries – 1 cup
Cinnamon – ½ teaspoon
Margarine – ½ cup
Directions
MAKING
1) In a bowl, using the electric beater, cream the shortening and add about ½ cup of sugar and egg
2) In a bowl, sift the flour, salt and the baking powder
3) Add the flour mixture to the creamed mixture alternating with milk
4) Turn the batter into a 9 inch layer cake pan
5) Scatter in the blueberries over the batter
6) Mix the remaining sugar, remaining flour and cinnamon in a small bowl
7) Cut in the butter using a sharp knife and mix in to resemble a coarse mixture
8) Sprinkle over the blueberries
9) Bake in the oven for 45 minutes at 350F till the cake is done

10) Serve warm
