Blueberry Bran Muffins Recipe

The blueberry bran muffins are baked wheat bran muffins that come out moist and surprisnly sweet for a bran muffin. Prepared with a batter of wheat bran and wheat flour along with sugar, eggs and buttermilk, the blueberry bran muffins also has whole blueberries and molasses for that burnt sweet taste.

Ingredients

 
2 cups all-purpose flour 500 mL
 
1 1/2 cups wheat bran 375 mL
 
3/4 cup whole wheat flour 175 mL
 
3/4 cup brown sugar 175 mL
 
4 tsp baking powder 20 mL
 
2 tsp baking soda 10 mL
 
1/2 cup molasses 125 mL
 
1/4 cup vegetable oil 50 mL
 
1 egg or 2 egg whites 1
 
2 cups buttermilk or low-fat yogurt 500 mL
 
1 1/2 cups fresh or frozen blueberries 375 mL

Directions

In bowl, combine all-purpose flour, wheat bran, whole wheat flour, brown sugar, baking powder and baking soda.
Mix together well.
In large bowl, combine molasses, oil, egg and buttermilk.
Blend well.
Add dry ingredients to large bowl and stir into wet ingredients just until moistened.
Quickly stir in berries.
Spoon batter into 18 large non-stick, lightly oiled or paper-lined muffin cups.
Bake in preheated 375°F/190°C oven for 25 minutes.
