Ingredients

 
1 egg
 
1 c. buttermilk
 
1/4 c. salad oil
 
2 c. flour
 
1/4 c. sugar
 
1/8 c. packed brown sugar
 
1/2 tsp. soda
 
2 tsp. baking powder
 
1 tsp. salt
 
3/4 c. blueberries, well drained
 
3/4 c. apples chopped
 
Nut Mix
 
1/3 c. chopped nuts
 
1/2 tsp. cinnamon
 
2 tbsp. butter

Directions

Preheat oven at 375 degrees.Beat eggs,buttermilk,oil & apple together.In a separate bowl mix all the dry ingredients.You have to beat the batter in a manner that lumps are formed,throw in blueberries to the mixture.Grease the muffin tins,quarter fill the tins.

Mix all the ingredients for a nutty topping & sprinkle over the muffins.

Bake the muffins in the preheated oven for 30-35

I substituted honey for the sugar and mixed the brown sugar in with the nut topping. This improved the sweetness. I also grind my own wheat flour so this recipe works well with whole wheat pastry flour. I substituted butter for oil. It was outstanding!
