Directions

Place 1/2 cup (125 ml) of the blueberries with the apple juice in a blender and process on medium speed until smooth.
Pour into a saucepan with remaining blueberries and other ingredients.
Bring to a boil, then simmer for five minutes.
Remove bay leaf and serve hot over pancakes.
Sauce can also be chilled and served over fresh fruit salad or on toasted fruit breads.
