 Unflavored gelatin1

Directions

1. Sprinkle gelatin over 1/4 cup of the skim milk in small custard cup; let stand for 5 minutes to soften. Meanwhile, heat remaining 1 1/2 cups skim milk and the sugar in medium saucepan over low heat; stir to dissolve sugar.
2. Stir in softened gelatin to dissolve. Cool slightly; stir in rum or vanilla extract, then pour into large bowl. Chill until semi-set, at least 1 hour.
3. Using electric mixer at high speed, beat egg whites in medium bowl until stiff. Using mixer at high speed, beat gelatin mixture until light and fluffy. Using rubber spatula, fold egg whites into gelatin mixture.
4. Layer one-fourth of the gelatin mixture alternately with 1/2 cup blueberries in each of 4 parfait glasses.
