Blueberry Mountain Dessert Recipe

Ingredients
1 lb. frozen, unsweetened blueberries
5 env. aspartame sweetener
1/2 tsp lemon juice
2 2/3 cup reduced-calorie vanilla ice cream
8 tsp prepared nondairy whipped topping
Directions
Remove 54 cup (125 mL) of the blueberries from the package.
Set aside.
Puree remaining blueberries, aspartame sweetener, and lemon juice in a food processor or blender.
Pour the pureed blueberries into a heavy saucepan.
Cook and stir over medium heat until mixture is very thick.
Transfer to a bowl and chill for at least 30 minutes.
Meanwhile, soften the ice cream.
Line eight muffin or custard cups with plastic wrap.
Pack each cup with 1/3 cup (90 mL) of ice cream.
Freeze until firm.
Set aside.
Puree remaining blueberries, aspartame sweetener, and lemon juice in a food processor or blender.

Cook and stir over medium heat until mixture is very thick.
